Homemade Vanilla Extract

Vanilla, it conjures up memories of sweet delights doesn't it. Have you read what is in the bottle of vanilla extract in the store?  Coloring, flavoring, corn syrup, alcohol, I wanted REAL vanilla extract, not all the fake stuff. Hold onto your hats, it's sooo difficult, just two ingredients why did I have to make it so difficult?


Homemade Vanilla Extract

4 vanilla beans
Fifth of Vodka (750ml)

Using a sharp paring knife cut a lengthwise slit down the middle of each vanilla bean. Scrape the moist vanilla bean seed pulp out and place in bottle of vodka. I cut beans into pieces, and place inside the vodka bottle as well.
Shake well, place in kitchen cabinet where you will remember to shake daily. The vanilla has to sit for at least 6 weeks, but the longer you let the beans sit the more intense the flavor.

Variations: Use Vodka or Brandy.

my mom was in Tahiti for 5 weeks, and she met some people through church that live/work on the vanilla plantations. they will only use Rum to make the extract that they use. so that is what my dad used when mom brought home her vanilla beans. I think he used plain rum, not the spiced. but it is a yummy vanilla, and we can squeeze the beans to get the spotted look of "vanilla bean" flavor.
