Weekly Menu:

Monday: Chicken Rice Hash with peas, mushrooms and chard

Tuesday: Leftovers

Wednesday: Pinto Beans with Homemade Tortillas and all the fixings

Thursday: Pinto Bean Casserole with Cheese, tomatoes, peppers, onions and cilantro

Friday: Leftovers or Spinach Quiche

Review of last week's menu: Here's a tip. When adding poultry seasoning to turkey soup because you want it to taste like the stuffing you can't eat, be careful - it's strong stuff. The black and white bean chili soup was delicious. You can find the recipe here: I left out the optional peppers except for the jalapenos and also the sugar. I added a bit more cumin as well as we like lots of flavor. It was delicious served with shredded pepper jack cheese and crackers.

Hopefully I will post about the homemade tortillas as well as the newest appliance we are acquiring very soon. Enjoy your weekly menus!
