Finding Time

Wow have I been absent. Only excuse is finding the time, which I know I could. It seems that I started this blog for the wrong reasons and need to change my perspective on it. I will now write what is on my mind, in my home and happening on our 'homestead'.



Right now I have a pot of pinto beans simmering on the stove and a pan of cornbread cooling on the table. We will have veggies with dip along with that. Here is a dip recipe that I sort of made up today. Time will tell if it is a hit or not. Very healthy.

Yogurt-Garlic Dip

1 c. yogurt
1/2 lemon, juiced
1 clove of garlic, minced (I used a garlic press)
1 tsp. dill
salt to taste

Mix all ingredients together and serve with veggies.

Another recipe that I've been meaning to post is one I call chocolate ricotta pudding. I adapted it from a recipe off of the food network.

Easy Chocolate Ricotta Pudding

1/2 c. sucanat
1/2 t. vanilla extract
1 (15 oz.) container of ricotta cheese
1-2 T cocoa powder, depending on your preference

Place the sucanat in the food processor. Run processor for about 1 minute to make the sucanat fine. Add the vanilla and process for one more minute. Place the ricotta and cocoa powder in with the vanilla sucanat. Process for one minute. Stop the machine and scrape down the sides. Blend for another minute. Cover for at least one hour and up to 1 day. Serve with nuts, crumbled crunchy cookie or something else crunchy over top. This is very, very rich and should make at least 4 servings (you only need a lil bit :)).

One of the projects I have slowly, and I mean slowly, been working on around here is making a homemaking binder. I will try and detail that on here as I "find the time." In the homemaking front... I have purchased an apron online and should be receiving that in the next week or so. How exciting.

DH's birthday is this weekend. We don't really do gifts as we are trying to save as much money as possible, but I have something up my sleeve. He may read this, so I will have to tell y'all what it is after the fact. His dad is coming down for the day and I will be making a brunch of egg bake and oatmeal. Then for a late afternoon meal we will be having chicken and bean burritos and sauteed corn and peppers. I've also got something up my sleeve for dessert, or at least I am hoping I do. If not... smoothies it is.

On the baby front... Mr. bubbers is doing well. He is actually sleeping right now. He's been going through strange patterns of sleep lately. One day he will nap just as I expect him to, others (like today) it's 2 very short naps and then one long one. I should wake him soon so that he will go to sleep by 9 or 10. One thing that has really been trying me lately with him is when he gets tired. It's as if there is an immediate shift from not tired to tired and he freaks out. He screams and cries and usually bouncing him is the only thing that calms him down, but lately even that doesn't seem to be helping. It seems that I spend 3 hours a day trying to either let him cry enough so that I can bounce him to sleep or bouncing/nursing him to sleep. It's driving me up the wall. I have no complaints otherwise. His smile is so delightful. He now squeals (very loudly) when he tries to laugh - it's so funny. When Daddy comes home he squeals when he sees him, it's just precious. He's also started screaming for fun. Really. It's like he's playing with his voice to see what he can do - it's really funny. And there is a definite difference between sad/angry scream and happy scream. He's just too cute.

Another long weekend coming up... yay! It'll be nice to have DH home for an extra day. Y'all have a good New Year if I don't get back before then.

Thanks for checking in on me.....sounds like you have been busy in my technical absence! That boy is adorable! The cornbread in the stove is making my mouth water. And I love the snow photo.....especially when you said it was fake for the moment! My kids are pining away for some frozen action but not me! My middle aged blood is thinner than ever....take care and see you (and read you) in the new year. Denise

Thanks for posting! I have enjoyed reading your blog! Your little one is just so precious.. about him being tired and upset... I always remember what my husband tells me when things of that sort happen..."this too shall pass" sometimes we can get caught feeling like it will never end (or at least I know I do) so I need that reminder that this will pass and to just seek the Lords direction while going through it! Thanks for sharing the yummy food ideas! I am going to give them a try soon!
