Fabulous Friday with basil

Today has been a nice day. It is cool outside - somewhere in the 70s - and I am loving it. I even have the windows open, which is a big deal because since I've been pregnant I am constantly hot. A few of my culinary adventures recently have involved basil since we had a bunch of it and I wanted to use it for something delicious. I actually forgot about this first recipe that I made last week that I call margherita bruschetta. Basically it is italian bread toasted under the broiler, rubbed with a little bit of garlic, topped with mozzarella and then placed in the oven again until the cheese melts. Then I topped it with a slice of brandy wine tomato, salt and pepper and a basil leaf. We both loved this. My dh even did, and he's not an adventurous one. Anyways... here's a picture of the finished product:



Then yesterday I decided that I would do the big harvest of most of our basil. Here is a picture of the washed, drying basil we got out of two plants:



From that I made a chicken-pesto spaghetti. For the pesto I made a roasted garlic pesto that included 3 whole heads of roasted garlic, all of the basil, a couple of tablespoons of nuts, olive oil and lots of pecorino romano cheese. Yum! I just whirred that up in the food processor and tossed it with some leftover chicken. Then cooked the spaghetti til al dente and mixed the noodles in with the sauce in a bowl. It was delicious and we have lots of leftovers. Here's a picture of the pasta:



So those are my basil experiences thus far. Tonight we will be having pork steak, sweet corn and stir fried napa cabbage.

So far today I have gotten two loads of laundry done - one was the bedding, the other still needs to be folded. I cleaned the bathroom from top to bottom, reorganized the utility room and have been working on the kitchen and living room area a bit. I feel like I need to clean today.

Three day weekend for dh is sounding really good! Maybe by the end of the weekend our little baby will decide it's finally time to come and meet us. My due date is now set for Monday, Labor Day, ironically. I really, really would like this baby to come sooner than later. I have been doing everything I have been told or read to get this baby coming out, but it will come when it is time I suppose. But a three day weekend would just make it so much easier .

Maybe your urge to clean is nesting? The bruschetta looks yummy...wish I had some!

I came just in the nick of time. We are having your bruschetta as something different for breakfast.

Whole grain bread, has your dairy and a veggie. Very healthy alternative to nutrician bars and my husband is on the go as a senior year student. So this should be a great surprise. It's definately neat waking up to the scent of garlic in the morning.haha

Oh, by the way, I placed the recipe you were interested in on my blog. Sorry I didn't get back to you sooner! ((hugs))
