Breakfast Plan - for Melissa (and a BONUS!)

Melissa at Down Mulberry Lane requested my breakfast meal rotation, so this is for her  ...and anyone else who's interested!

Monday - French Toast

Tuesday - Yogurt & Muffins

Wednesday - Hot Cereal & Fruit

Thursday - Pancakes & Meat

Friday - Free Choice

Saturday - Mom's Big Brunchy Breakfast

Sunday - Cold Cereal & Fruit

As you can see, it's not very detailed.  I like enough structure to keep me on track, but enough freedom to give me some variety and flexibility.  Thus, my menu/meal plans are just vague enough to give me some "wiggle room" while also being a very solid prompt.  

Some other notes:  a) when the chickens mature, I'll be adjusting our menu to include more eggs;  b) "meat" at our house generally means bacon, sausage or ham, depending on what's available or desired;  c)  "Big Brunchy Breakfast" became a quick favorite in my home after I introduced it a couple of months ago; it's my chance to play with my favorite cooking of all -- breakfast foods -- and introduce some variety to my stick-in-the-rut children, and make Saturday morning a special family time, too.

"And as a special bonus" ... I will throw in my fantastic oil-free pancake/waffle recipe that my mom developed when she had lots of eggs to use up from our chickens.  (Those of you with chickens will appreciate the chance to use up those eggs!)

Whisk 4-6 eggs (I currently use 4; my mom used 6).  Add 2 cups of water and whisk briefly till lemony.  Stir in 2/3 cups powdered milk till dissolved (very quickly - just a stir or three).  (This water & powdered milk can obviously be replaced with 2 cups of milk if desired -- for you goat people, that is! -- yea!! someday I will be one of you!) Dump 2 cups of flour on top of liquid, but don't stir in yet.  Make a slight dent in the top of the flour and put in 1 tsp. salt and 3 tsp. baking powder.  Use your teaspoon to slightly stir together dry ingredients.  Now, use whisk to combine dry and wet ingredients.  This will be thick and glommy at first but will gradually even out.  If it's a bit too thick (because you measured as inaccurately as I do ) add just a bit of water to thin.  Your batter is ready!  If making waffles, lightly spray iron with spray oil (Pam); pancakes are generally fine on a dry, non-stick skillet.

Here in Kansas our growing season is, on adverage, 196 days long. :) By mid-June it will probably be in the 90's, so strawberries won't have a chance by then!! Most of my spinach has already bolted.

I like your ideas on the syrup!

How did the tomato syrup end up tasting? Is it sweet, or taste like tomatoes? I was looking at the recipes in my Blue Book, but I think I need to stick to ketchup this year. :)

Thanks for the pancake/waffle recipe. I don't have chickens but my inlaws do and we get alot of eggs from them. My kids love waffles and pancakes, so this sounds great.

ahhh, muffins... they've been out of the rotation way too long. I will be adding those. Thanks for your ideas... and I may just try your pancake recipe. We have a pretty good waffle recipe, but I'm always open to trying new ones.
