My cold

I have a bad cold. I sit here thinjking I have so much that needs to be done, stuff that takes longer with only one hand, but I have no energy!

I need to can my apple pie filling. I made the filling part before my operation, now I need to do the apple and canning part. I really should do this today.

I give this canned apple pie filling as Christmas gifts, people love it.

Of Pumkins & Pigs

A lot has happened around here in the last 6 days! Last Friday I had an operation on my hand, so I am left handed for awhile. The following day our four pigs were butchered. The weighed in at 166, 170, 175, and 180 pounds hanging weight, the butcher said it is some of the leansest pork he has done this fall. We are well please with these results! After figuring it all out we only paid $1.00 a pound for the meat that now fills our freezer. And I am very happy to have one less chore to do. This is our third year raising pigs and I see many more years to come.

Today my son, Justin, helped gut pumpkins. I cooked them covered with tin foil, later after they cooled I scooped them out and pureed the pumkin. My daughter Sarah, and I made Pumpkin bars with a cream chesse frosting. We froze enough pumkin to go us the winter!

It is always satisfying to sit down and eat a meal that came fully from the work of our own hands, on our own land. Tonight we ate pork roast (cooked in the crockpot), green beans (steamed), and mashed potatoes with pumkin bars for dessert! It tasted great!
