Goose for Dinner

 I know that some people love to have geese on their homestead, but we can't stand ours.  Poor things are going to end up on the dinner table tonight.  Well, one of them anyway.  The other one is going to be put in the freezer. 
 Yes, they are beautiful, but they keep attacking the children.  The knock over the water for the chickens, and the poop in all of the other animals water!  We can't have them if they are going to behave that way. 
 So, Brandon went out there and killed the first one...the Chinese Goose aka as Woodrow, and yes it was named after Tommy Lee Jones' character from Lonesome Dove, Capt. Woodrow Call. 
 As I am typing he is cleaning  Woodrow so we can get ready to cook him. 
 Now I need to go and find a good recipe to cook him!  I have never cooked a goose before. 
 I found one that wants you to use cream of mushroom soup...we don't care for cream of mushroom soup!  So, that one is out. 
 Here is one I found in a book called Outdoor Tables and Tales  Recipes and Food Memories from American's Top Outdoor Writers. 
 It is called Specklebelly Goose

1 goose
Creole seasoning
Olive oil
1 tablespoon chopped garlic
1 onion chopped
1 green bell pepper, chopped
1 pound link sausage, sliced

Season goose with Creole seasoning and brown in olive oil in Dutch oven on stove top.  After goose is browned, pour off excess grease only.  Turn goose belly down and add remainin ingredients.  Add enough water to cover half the bird and bake, covered, in 300 degree over for 3 hours. 

Now, I don't have sausage, or a dutch oven big enough so we are going to skip those parts.  We will put the goose in our roaster.  Hopefully, it will turn out great...or at least edible.  LOL   Perhaps some wild rice or brown rice and steamed vegetables will go good with the goose.  Well, it sounds yummy to me anyway.

I will take a pic of the before and after...and I mean the bird in the roaster and cooked.  Don't worry I did not take pictures of the entire process!

Alas, there were no pictures taken.  I wasn't feeling well, and when the goose was done, the family dug in before pictures were able to be taken.  Hopefully next time I can get some pictures before the goose is in the belly's of the Williams Clan.

So, how did it turn out? Is life a little safer without the mean geese around? I have friends that bought a goose to be a "guard dog" for their runner ducks. Strangely enough, Hal, the goose, imprinted on a 5 gallon pail, the first thing he saw when he hatched. From then on, it was his mother. If they wanted to aviod Hal, they just moved his bucket. The kids dared each other to run up and touch the bucket before Hal nailed them!
