Taco Soup
I was just reminded, in reading another blog, that one of the reasons I enjoy the chilly fall weather COULD be because cold weather is soup/stew/chili weather!! I LOVE smelling a good soup simmering on the stove in my warm, cozy house. Oh, thank You, Lord, for the sweet, small pleasures You give us!
Here is one of my family's FAVORITE cold weather (or anytime, acutally) soup recipes! If you try it, PLEASE let me know how much you LOVED it!

TACO SOUP
1 lb. ground beef (I use chuck)
1 med. onion - chopped
1 15-16 oz. can kidney beans (UNdrained)
1 14-15 oz. can corn (UNdrained)
1 15 oz. can tomato sause
1 pkg. taco seasoning
cilantro to taste (I like TONS!)
2-4 jalepeno peppers - finely chopped
16 oz. of water
~Brown beef, onion, cilantro and pepper; drain.
~Mix everything together in a dutch oven,
~Heat through for 45 minutes - 1 hour.
~Pour into bowls and top with crunched tortilla chips, shredded colby cheese and sour cream!!
