Help! I am drowning in Turkey broth!!!!

I have 3 turkey carcasses boiling on the stove right now. in one big 22-qt pot. I have 7 quarts of finished, strained and bottled stock steam-processing on the stove right now, and another 7 already finished and cooled on the counter. these 14 are from my in-laws thanksgiving last Saturday (yeilding 11 quarts) and some thinned pan dripping stock from my parents (yielding 3 quarts).the three turkeys boiling now - with carrots, fresh sage, onions, celery, black peppercorns, and bay leaves - are the carcasses from my parents, my aunt's, and a friend's. I will strain them out tonight so I can skim off the fat before boiling some more. I need to add a bit of vinegar to help leach the bones of calcium (or so I have been told). I will also be trying to break the bones tonight (hah! good luck with that!) to get more of the flavor and nutrients into my stock. I am hoping to get around 30 bottles this year. I will boil in new water each set of bones 2-3 times. I do not have a big enough pot (or stove, LOL) to do just one round. For each boiling I simmer for about 4-6 hours. I do a coarse strain after each boiling to capture the veggies and bones, then dump those back in the pot with new water. Well, actually, after the first boil, I pick out the meat and bag it. This year I am giving it to a friend - we do not eat a lot of turkey around here - dh is down-right Un-American about turkey at thanksgiving (LOL!). After the second or third, I clean out everything except the bare bones, which I boil one last time, broken and bare to get the very last bit of goods out of them. I have been feeding the boiled veggies, skin, etc to my dog. the bones seem too hard and brittle, so I tossed them into my compost. any thoughts on that? maybe something else I could do, are bones okay in compost? At this point I take all of my fat-skimmed broth that has been mixed from the various boilings and boil one last time to mix them all up good. When this boiling is done, I fine-strain it to get out every last piece of stuff. then I pour it into cleaned and sterile glass jars, and steam-bath it at 13 pounds of pressure for 25 minutes. when done, I turn off the stove and let the steam die down until I can lift the bottles out to the counter. the next day when I am sure htey are sealed, they go down to the storage room to await happy usage through the year. but the next few days are going to be work-laden. happy brothing to you. oh, did I mention, I have 2-3 more turkeys to collect?
