98 bottles of peaches on the wall....

take one down, pass it around, 97 bottles of peaches to go!  well, actually, we bottled 103 - one broke in the water-bath, one had a chip on the rim, and 3 are in the fridge waiting....  so there are 98 bottled and sealed and ready to go downstairs!
we got 4 bushels of peaches through our church - thecongregation contracted with a nearby grower for a 100 bushels, and divided it from there!  On saturday we sorted them into overripe/bruised, ready and not-quite-ripe.  we bottled half on Saturday, using the overripe/bruised for juice mixed with water instead of the sugar-water syrup.  mmmmm - sooo good!  we have to do this many so that we can eat peaches all year long.   if we run out, we cannot just buy some at the store - the sugar-water syrup is just nasty once you are used to the naturalness of hte peach juice!  and we drink it too!  once the peaches are gone out of a bottle, we pour out the juice and drink it.  my SIL adds it to her smoothies in the mornings.
this morning we finished the last of the peaches, well, almost the last - there are about 2 dozen that were not ripe even yet.  I am trying to decide if I want to do those tomorrow.  it would take about 10 minutes to skin them and bottle them.  I have three jars in the fridge that did not get a water bath - my canner holds 7, and to do 3 is kinda silly.  I also have 4 more bottles that are empty.  so that would make a full load.  but then no peaches to eat in the next few days.  delimnas delimnas!I had to buy 4 dozen canning jars this week - I did not have enough, and my mom and SIL who have some of my bottles told me to come get them, but they are both in SLC, and that is too much work for bottles.  I'll just buy some.  besides, I have November coming up, and I will be bottling turkey stock then.  if I can find enough turkey carcuses begged from friends and neighbors.  I generally get 6-7 carcuses and turn them into stock, cooking for days .  then I strain and bottle and pressure can the broth.  and voila - 35 or so bottles of "chicken" stock to use whenever a recipe calls for it!  and it is no-sodium, high-nutrient natural stock that is soooo yummy!.  so I will need those bottles from mom and SIL anyway.....
anyway, that has been our busy times.  I have been joking that if we suddenly had to live on our food storage, we could at least eat peach coppler every day - I have enough wheat/flour and sugar and peaches if nothing else!
beans in October.  that is the plan anyway.....

Do you not put sugar in the water when you process the peaches? I just did peaches this year and am interested to see if you have another way of doing them that might be better.

no, sugar is there to sweeten it. not to preserve it.
I did sugar-water the first time, then plain water two years ago. the first bottles we opened were kind of bitter, but the longer they sat, the sweeter the water became, like the peaches were flavoring the water. then last year I juiced peaches in my mom's Mr. Juiceman, and we added 1/3 - 1/2 cup in each quart and filled with water. ooooh - so good. so this year, I just pureed the peaches in my Vitamix, mised it with water, and used that. so far, so good!

Hmmm... Do you think I could just puree the peaches in my food processor? I don't have a juicer or anything like that.

yes - I noticed when I "juiced" the peaches, it threw out juicy pulp, and the juice itself was very thick and opaque, so this year I just blended peeled, cleaned, pitted peaches until smooth and diluted it with water. I waited until I had filled several bottles with peaches, then used my "peachy" asorbic acid water to dilute.extra peachy goodness, ya know....
