canning question - please help

okay, I have only ever used a pressure canner (and I am pretty good at it, if I do say so myself!). but water-bath canning is supposedly easier and faster to use. and if I am doing something that does not require a steam/pressure process, I want to use the other. so here is my question:
1) can I use my pressure canner as a water-bath canner?
2) if so, how do I do so? mostly I am talking about the lid here - do I just put it on and not seal it, can I leave it off? also, do I need a bottle rack for it?

I am receiving 4 bushels (or so) of peaches on Friday or Saturday, so I need to find the answers to my question. thanks!

if you are going to make jelly and the such - you don't need the canner - just give them a hot water bath for 10 minutes (pint size). That is the limit of my understanding, since that is about all I can.

Yes, you can use your pressure canner as a water bath canner, I use mine like that all the time for jellies and such...I just get my water boiling hard with the lid on but I do not put on the pressure gauge so that the steam can release, just process as you would in a traditional water bath canner...
