okay... getting raw milk, wanting to make dairy products.  first, how do you skim the cream?  I have just been using a ladle and scooping it off the top.  is this a good way, or are there better ways?  I made butter last week and it was goooooooooood!  I think next time I will add some salt.  I never realized how much I believe salt is necessary in butter!  LOL!
but this week I want to do sour cream.  can I just set it out on my counter and let nature do her job?  do I add something to help it along?  is it like yogart, am I supposed to add a start to it?  HHHEEELLLLPPPPP?????
and what about cheese?  can I use that skimmed milk for cheese?  oooooooooh!  what about cream cheese?  how does one make that!?!?!?

any help would be appreciated!

We had a cream seperator, but those would be several hundred dollars. I think you are stuck with a spoon!

We mostly made butter, in huge, cookie-sheet sized slabs that we'd then cut into normal sized bars and keep in the freezer. I had no idea how much butter costed until I married!!!

I'm glad I stopped by this morning!

Cream ... you can get a small separator and use it but it's a pain to clean and expensive.

I used gallon jars - the cream would rise to the top and because it was in a small area, the cream was thick and easy to skim with a ladle.

Yes! Use salt with your butter! I do NOT like unsalted butter, but the salt also helps keep it fresh longer!

Sour cream - put a bit of vinegar in it - a teaspoon for a quart works. Adjust for how much you have. Do not leave it out of the fridge- it not only gets sour but it goes bad. Put the vinegar in, stir it around and put it in the fridge.

Cream cheese is milk that is made into cheese .. it's a soft cheese. There are recipes out there for all kinds of cream cheese .. You can put vinegar into milk and cook it until it thickens, then drain it. Sorry, don't have the recipe off the top of my head.

YES, use the skimmed milk for cheese, on cereal, cooking, whatever.

Also, I just read the ideas from the link that Ashley gave you ... excellent for what you want. And leaving the milk / cream on a cool counter for 24 hours is not bad - it's just when you leave it longer!
