what are y'all (no offense, my southern friends) making for dinners in this heat?  most of my menu items seem to include either soups, stews and chilis OR oven foods like lasagne or roasts, etc.  those that are not seem to have  stove-top-intensive  preperations.  I cannot wait for Fall.  september, here I come.
I am not even going to have a garden this year.  I planted strawberries and that night it frosted them - which would not normally be a problem for strawberries, but fresh in their new home without established roots... it also killed my tomatoes and cucs.  so I bought 4 new tomato plants; the grasshoppers have stripped 3 down to the main puny stem.  the 4th may make it.  so come september, I'm going to try fall crops - broccoli and lettuce and spinach.  and plant more strawberries adn raspberries.   I think my lemon tree is trying a blossom or two.  that is exciting, but my avocado is surely dying.  this is pathetic!
so, back to the topic at hand... hot weather foods.    I think I may even buy bread for the next 2 months.... except, I do hafta make pita.  I cannot even stand the thought of buying pita anymore.  it just isn't yummy compared to my homemade pita bread.  not to mention 50 cents a pocket.  oh, sure, mine do not all puff up, but at least the ones that do are not worth 50cents a pocket.  say I get 5 out of 12 puffy pitas (that is 10 pockets).  I have not spent $5 worth of ingredients on it.  maybe energy, but I also get 7 flat bread half-pitas which are really yummy for other things.  so, I cannot justify buying the pockets anymore.  course, I don't buy the real expensive pita pockets anyway.  I get the 10 for $2 (sometimes not perfectly pocketed) so that is 20 cents each.  maybe for the summer, that would be worth it.  cuz a 500 degree oven is AWFUL!!!! when it is 98 degrees outside!  lol!  only then we hit the problem of ds5 who has not liked pitas until I started making them.
maybe I ought to revisit that solar oven idea.  then I could make bread anyway (if not pitas) in this heat.  and cook chicken dishes in the outsides.  well, gotta go get dinner on.  using the toaster oven tonight.  maybe I could set that up outside for a few weeks.

Cold meals

Taco salad! Chicken salad. :)

Even tacos - everything doesn't have to be steaming.

Sandwhiches! My mom likes to buy long loaves of bread at the store and make hoagies in the summer. :)

We eat lots of fruits and veggie sides, we consider it a seasonal thing. :)

HTH! My dad liked to come in out of the heat to a cold meal, we have air conditioning, so my dh isn't so picky, I favor cold meals but he doesn't care. ;)

There are so many fresh things to eat in the summertime that we find ourselves doing a lot of skillet type dishes with just lots of veggies chopped up and stir fried. Seems meat is just 'heavy' in the hot weather, so we don't do much with it except for when we grill out.

We like salads a lot in the summer. Experimenting with different lighter dressings is fun...like raspberry vinegrettes and such. It's yummy to add grilled chicken or shrimp to your salad too! Try adding apples, orange slices and other fruits and even spiral pasta in a green salad is fun! Tonight, we had nacho chips with a spinach dip with a fresh spinach salad, topped with chilled, boiled shrimps...Mmmm-mmmm!

Oh, speaking of pasta...chilled pasta salads are good in the hot weather. I'll try to post a couple of recipes I have (one is a delicious asparagus and black olive pasta salad). I serve almost everything with rolls made from fresh ground whole wheat. They really seem to round out the meal and fill the tummies! Ohhhh, those rolls would certainly be good with some of your fresh butter!!
