breakfast for 40 - please help

this friday night our church is having a fathers/sons campout.  dh is in charge of breakfast on Saturday morning, and herein lies my dilemna.  we do not eat as much as most.  2 pancakes, 1 egg, some juice, and we are good.
we are thinking pumpkin pancakes (which I will mix up previously into 2 containers: wet and dry so all he will have to do is combine them with some eggs); scrambled eggs; bacon/sausage; juice
they are estimating 30-40 people, from 5yrs and up.

how many pancakes should we plan per person?  how many eggs?  how much bacon/sausage (we don't eat that anyway.....  I joked about getting some Morning Star vegetarian sausage patties and seeing if anyone noticed that they don't have meat  )
any help would be appreciated.

I think I would figure, 2 pancakes, 2 eggs and 2 sausages. Pumkin will make the pancakes more filling, and the five year olds will probably only eat 1,1,1 but the 40 year olds will help them out... Hope that helps...

For about 50 people, with the variety of things you are having, I'd say about 60 pancakes, 5 dozen (maybe less as they are for scrambled style) eggs, 5-6# bacon and/or 6# sausage links (that's about 100 pieces each) and maybe 2-3 gallons of juice.

If you want cheese in the scrambled eggs, go with about a pound of shredded....and you're looking 2 containers of syrup.

I really can be of no 'real' help I'm sorry. Folks around here just buy large bags of 'Kruteas' mix at costco and lots of the other stuff. They just keep cooking until everyone is full. Of course being female I never have anything to do with the fathers/son's except send mine. What I got a kick out of in your post was the fact that you said age 5 and up. Around here if they're not nursing (or 'need' to nurse) they go with 'papa' (I mean they need to learn how to take care of youngun's too...as they helped bring these sons into the world...so might as well start them while their little...if circumstances permit). Hope you understood what I was trying to say. Good Luck!
