vegetable stock help??? and weed jelly

what veggies do you use in your stocks?but first an announcement of strange and never-to-be-repeated work: I did it! I made jelly out of a weed! I gathered the children, we asked at dandelion fields if we could pick, if they had been sprayed, and we picked tons and tons of blossoms. I plucked the thousands of petals off the green and packed it into a quart jar. only, I kept needing one more cup! I would get lots of blossoms, put them into the jar, pack them down, and need one more cup. I would do it again, often filling a 3-cup bowl, pack it down into the jar; one more cup was needed. AAAAAAARRRRRRRRRGGGGGGG!!!! finally I said ENOUGH! and I continued on my way through the recipe. anyway, I have 6 half-pint jars of jelly; only the jelly never really set, so it is more like dandelion syrup. I did empty them once to do a reboil, hoping to firm it up, but while it is thicker now, it is still more syrupy than jelly. it does taste kind of like honey, with a strange zip to it. I haven't yet been able to determine the flavor of the zip, but it is interesting. I am trying to decide if I should unseal the jars one more time and try again, or just call it good. I also discovered I had 3 gallon freezer ziplocks of vegetable peelings and ends, so I boiled them with some herbs - rosemary, thyme, bay leaves. I now have 7 quarts of a very dark and flavorful vegetable stock. it seems heavy on the carrot flavor - but that is hardly a surprise, seeing as the majority of the frozen veggies were carrot peelings. Now I am going to be saving my veggies for thanksgiving and the turkey stock I make from the carcasses I beg from friends and relatives. but here is my question again: what veggies do you use in your stocks? I have used carrots, celery, onion, and leeks. I think that is it. garlic, but that is more in the herbs/spices category than the veggie category. anyway, let me know what other veggies you use to flavor stocks. and herbs - what herbs do you use?
