Pumpkin Streusal Muffins

We actually have 2 recipes we like a LOT. The kids like the one better because of the cream cheese filling, but hey like the other better when I add choc chips. I think they would really like it if I added choc chips to the cream cheese one. LOL!
So the first:

Pumpkin Streusel Muffins

1-1/3 cups flour
1/2 cup sugar (6 T honey)
1 Tbsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 tsp. ground nutmeg

1 egg
1/2 cup milk
1/2 cup pumpkin
1/3 cup oil

1 3-oz package cream cheese, cut into 9 cubes (I have actually found that they should be SMASHED cubes)

Streusel:
1/4 cup packed brown sugar
1/4 cup chopped oatmeal (the person from whom I go this also used walnuts or pecans)
1 tsp. ground cinnamon
1 Tbsp. cold butter or margarine

1.In a bowl, combine the dry ingredients.
2.In another bowl, beat egg; add milk, pumpkin and oil. Stir in dry ingredients just until moistened.
3.Fill 9 greased or paper-lined muffin cups half full. Place one cream cheese cube in the center of each muffin. Top with remaining batter.
4.For streusel, combine the brown sugar, pecans and cinnamon in a small bowl. Cut in the butter until crumbly. Sprinkle over batter.
5.Bake at 400 F. for 18-22 minutes or until muffins test done.
6.Cool for 5 minutes before removing from pan to a wire rack to cool completely.
7.Yield: 9 muffins
