pumpkin waffles

Spiced Pumpkin Waffles

Ingredients
1 ½  cups all-purpose flour
1 T baking powder
½  teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon ground ginger
1/8 t salt

4 T butter, melted and cooled
2 egg
¼  cup firmly packed brown sugar (3 T honey)
1 cup canned pumpkin puree
1 2/3 cups milk
note: if you are using home-canned pumpkin: use 1 quart pumpkin pureed  in the water + 1/3 c+2T dry milk (which you add to the dry ingredients)


Directions

Mix together dry ingredients in a small bowl.
In a larger bowl, add eggs, sugar, pumpkin, milk, and butter; beat well.
Gently fold in the flour mixture.
Cook according to your waffle iron directions.

These are good with just butter.  they need no syrup or choc chips inside (although I have done that on special occasions for the kids)


dh says this is the only waffle recipe allowed around here.
