Pumpkin Chili

I stole this from someone here, and please forgive me, I do not remember who.... But I agree - this is a winner!

This is the original recipe as I found it:
Pumpkin Chili......
Brown 1 pound of ground beef or turkey along with a small chopped onion and small clove of garlic, smashed.
When meat is browned, drain,
add 1 1/2 cups water, 1 can chili beans, 1 can pumpkin, cumin to taste, chili powder to taste, and garlic salt to taste.
Bring all of this to a boil, turn down to low, and simmer for 30 minutes.

Only my youngest daughter turned this down, but she is the pickiest eater I have ever seen. This feeds about 5 or 6. The pumpkin is a substitute for tomato.

This is my adaptation for my cooking and family needs:
2 c pumpkin
1 ½ c pumpkin water (this is assuming you are using home-bottled pumpkin which has a LOT of water, and almost no pumpkin flesh, so you have pumpkin water drained from the flesh; i f you are using store canned pumpkin, just water works fine)
2 T taco seasoning
1 t cumin
1 can kidney beans
1 can black beans
1.5 c shredded cooked chicken

2 T onion
2 garlic
2 T butter
saute onion & garlic in butter

low in crockpot 5 hours
