I just made this up last night for a side dish with black beans. It is a cold dish, though. I mixed together the following, then chilled it:
~3 cups black beans
2 big 'ol tomatoes, chopped
1/4 cup olive oil
1/4 cup lime juice
2 cloves fresh garlic, crushed
a handful of fresh chopped parsley
a smidge of fresh chopped cilantro (to taste-maybe 1-2 Tbsp.?)
It was oh-so yummy, but you have to want a cold side dish. Somewhere I have a Sue Gregg recipe for sweet-n-sour black beans that is also great (a warm dish). I'll try to look it up for ya!
