Prairie Gold vs Bronze Chief wheat berries

04:17, Tuesday, April 1, 2008 .. 0 comments .. Link

I decided to do my own experiment of sorts using these two berry types.  I will say I already decided I prefer Prairie Gold -but tried anyway.  I used the exact same recipe, and the weather conditions were the same as I made the batches back to back.  The Bronze Chief rose up higher and had a redder color, the Prairie Gold was, of course, lighter in color. The Bronze Chief had a stronger bread flavor, the Prairie Gold much milder.  I liked Bronze Chief and did not dislike it - but I still preferred the Prairie Gold. Go Montana Wheat!!! :0)

Also, I believe my loaves have been much lighter since I grind here at home and use the flour immediately.  I used to grind at my SIL and bring home to bake - but it still seems to make a difference if it's used immediately.

There is NO comparison to fresh warm bread, made with Fresh ground flour, it is light, beautiful brown, and the kids beg for it as they smell the bread beginning to bake!! :0)

An excellant resource is www.breadbeckers.com - otherwise see my previous post on WW bread baking tips - share any you've learned that I haven't included! I always appreciate new tips that help bake better bread!!!!

blessings!!!
