Pancakes (Egg free - you won't notice... too much anyway!" :0)

Pancakes

2 cups flour (I generally use WW-Prairie Gold or Pastry Flour make the lightest pancake)

1 1/4 t baking soda

1/2 t salt

1-2 T sugar

2 cups buttermilk, sour milk (I use rice milk as I am allergic to milk, water would work or OJ)

1 T olive oil

1 t baking powder

1 ts cinnamon or vanilla (optional)

Beat together and spoon onto hot griddle.

I generally make 2-4 batches at a time - have a big pancake day and freeze. These freeze very well.  This is one of our staple breakfasts at our house!
