Midwest Ham & Corn Chowder

I dug out this recipe from JoAnna Lund's cookbook, "Make a Joyful Table", to deal with loads of leftover ham from Christmas. I doubled the recipe to feed 6-8, depending on how big a bowl you use. It was so well received, I had to make another batch the next day. Very hearty, and thick, it really hits the spot on a cold, raw day. I served it with hot rolls. JoAnna advocates a low-fat lifestyle, and her recipe calls for low-fat ingredients, like extra-lean ham and evaporated skim milk. I used regular. You decide. I also made this in a soup pot on the stove, while JoAnna's recipe called for using the microwave. I liked having the pot on the stove, so I could stir frequently. Here's the recipe, as I made it:



Ham, chopped or diced (recipe calls for 2C, but I used ham to taste - I just cut up a bunch and put it in)

1 C finely chopped onion (again, I cut up a bit of onion to taste, probably less than 1 C)

2 C finely chopped celery (again, to taste, I used 2 or three stalks, chopped up, most likely not 2 C)

1 C frozen whole-kernel corn

4 T water

2 8-oz cans cream style corn

2 12-oz cans evaporated skim milk (or regular evaporated, or 1%)

2/3 C instant potato flakes

2 tsp dried parsley flakes (I added to taste and did not measure)

1/4 tsp black pepper (again, I added to taste, probably more than 1/4 tsp)

In a soup pot on low to medium heat, simmer the celery, onion, whole-kernel corn, and ham until the celery & onion begin to soften (I like mine a little crunchy, cook to taste). Stir in the cream-style corn, evaporated milk, potato flakes, parsley, and pepper. Heat until hot, stirring frequently to avoid scalding. I covered it halfway (the lid sticking out a bit to vent) while cooking.

That's it! So easy, and so yummy. You may be able to thin this down using regular milk if you want to try. Enjoy.
