Whole Wheat Angel Food Cake

Marlene Jacobsen shared this recipe at a class I recently took on using whole wheat. This angel food cake turns out wonderful!!!
This is a wonderful recipe when you have way to many eggs from the chickens!!!!!

Whole Wheat Angel Food Cake

¾ c. whole wheat flour (ground fine)
¼ cup corn starch
1 ¼ cup of powdered sugar
12 large egg whites
½ tsp of salt
1 ½ tsp cream of tarter
1 cup powdered sugar
1 tsp vanilla or almond extract

Combine 1 ¼ cup of powdered sugar, cornstarch, whole wheat flour. In separate bowl beat egg whites, salt, cream of tarter until peak.
Gradually beat in 1 cup powdered sugar and extract.  Then gently fold in, by hand, the flour mixture in thirds.  Pour into angel good cake pan. Bake at 375* for 35-40 min.  Cool completely, upside down!
