Almond Joys

Almond Joys
Mix together:
2 cups of sugar
½ cups of H20
2 cups of white Karo

Boil to 230* Soft ball stage.  Remove from heat.  Add:

24 oz coconut
¼ tsp almond extract
1-2 cups chopped almonds

Mix well. Allow to cool.  Should be quite stiff. If nuts are omitted, extra coconut must be added.
(Use about 14 oz for half recipe)

With buttered hands shape coconut into balls or oblongs. Tope with a whole almond if desired.  Dip in chocolate( about 10 oz for half a batch.)
