Olive Garden Toscano Soup recipe (copycat)

OLIVE GARDEN TOSCANO SOUP (copycat) RECIPE ¾ cup onions, diced 1/8 inch 1 slice of bacon, ¼ inch diced 1 ¼ teaspoon garlic cloves, minced 1 oz of chicken bouillon 1 qt of water 2 med potatoes, cut in half length-wise, then cut into ¼ inch slices 2 cups of cavallo greens ( kale can be substituted), cut in half, then slice into 1/16 inch strips 1 ½ cups sausage link-spicy, pre-cooked, cut into half length-wise, then cut At an angle into ½ inch slices ¾ cup of heavy whipping cream DIRECTIONS: Place sausage links into sheet pan and bake at 300* for 15-20 min or until done. Place onions and bacon into 3-4 qt saucepan and cook onions over medium heat until the onions are almost clear. Add garlic and cook 1 min. Add chicken bouillon, water and potatoes, bring to simmer for 15 min. Add remaining ingredients and then simmer for 5 min and serve. YUM |
