I'm looking for a quick basic real easy zucchini bread with no chocolate..I'm trying very hard to cut that out of my diet..I would like to make it for dinner tonight.. Thanks

Zucchini Bread (really moist)

Even if you don't like zucchini, you'll like this.
Zucchini Bread
1 1/2 C. sugar
1 C. oil
3 eggs
1 tsp. vanilla
3 C. flour
1 tsp. baking powder
1 tsp. soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger ( sometimes I omit this if I don't have any on hand)
3 C. grated zucchini ( I like to use the food processer instead)
1/4 C. chopped nuts (optional)
1/2 C. raisens (optional)
Beat sugar, oil, eggs & vanilla. Sift dry ing. together. Blend with wet. Fold in zucchini, nuts & raisens. Place in 2 loaf pans or 1 bunt pan. Bake @ 350 degrees for 1 hour.
