This recipe is so good I got it from Simply_Heart_and Home..
Chicken Enchilada Casserole
2 cup cut up cooked chicken
1 tsp sugar
1/2 cup thick'n Chunky salsa
1 can (19oz)mild enchilada sauce
(opitional) 1 can whole kernel corn,drain (I omitted this.
2 cup coarsely broken tortilla chips
4 medium grenn onions ,sliced (1/4) cup
1 medium tomato,chopped (3/4) cup
1.cup shredded cheddar-Jack with jalapeno peppers cheese blend(4 oz)
Heat oven to 350 In medium bowl,mix chicken,sugar,salsa,enchilada sauce,and corn.
Place totilla chips in ungreased 8 inch square (2 quart) glass baking dish.Top with chicken mixture .Sprinkle with onions,tomato,cheese.
Bake 35-45 minutes or until bubbly.If desired arrange addittional tortilla chips around the edge of dish.
Makes 4 generous servings ( 1 1/2 cup each.)
*You can also add 1 can (160z) spicy chili beans, undrained, to the chicken mixture for extra flavor and fiber..

YUMMY!!! I love spicy stuff. I will have to try this one. BTW, I love the snowman plate too.
