Apple Whoopies Pies (picture~recipe)

I made these this morning and they are so good. I got the recipe from kitchenlink.com..The amount of apple whoopies depends on the size you use. I know I used my own recipe for the filling and it was so good. I had a few taste..Yummy!!!.. ok here we go.

Apple Whoopie pies
4 cups flour
1 tsp baking powder
1tsp baking soda
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
2 1/2 cups brown sugar
1 cup vegetable oil
2 eggs
2 cups peeled and grated apples
1 tsp vanilla

Pre-heat oven to 325 degrees.
Grease or parchment line cookie sheets
combine flour,baking powder,baking soda,and spices in a mixing bowl set aside.
In separate bowl,cream together sugar,oil,eggs,apple, and vanilla. Mix together all ingredients.Drop by rounded tablespoon full onto prepared cookie sheets.
Note I used a small ice cream scoop
Bake @325 for 10-12 minutes,or until cookie center springs back when lightly pressed. Cool thoroughly on wire racks or paper towels before filling.
FOR THE FILLING
1 1/2 cup shortening
3 cup confectioners sugar
3 cup marshmallow fluff
3 tsp vanilla

Whip shortening and sugar together until smooth.Blend in fluff and vanilla until well mixed.
Spread filling between 2 cookies. Wrap individually..
Note~ I used my own filling..
2 cups confectioner sugar
3/4 cup shortening
1 tsp vanilla
Whip it all together until blended.. I did a double match of the filling...

Those do look YUMMY! I have several recipes for various Whoppie Pies from a Mennonite Cookbook that I have. I plan on trying out the chocolate and pumpkin ones really soon.

Hi Amanda choc whoopies pies are real big here in Maine with vanilla filling and peanut butter oh so good.. Let me know when you make the pumpkin and choc I'm planning on making pumpkin on Fri so I will have them for Sat..

Thank you, also, for taking a guess at the kind of apples I bought at the fruit stand. *smile* I thought the name was a "co" somthing, but then as I was talking with a gal on the phone the other day she mentioned an apple breed that I thought it might have been and it was not "co" but started with a "c" and ended with and "o". *smile* I will see when I go back this Friday and then write it down to share. *smile*
