Has anybody made salsa and canned it from scratch? If so I was wondering what you put in it? I'm thinking about making some tomorrow.. I would also need the process time for pints.. Thanks..

I make salsa every year but I just kinda make it as I go. I will try and send you what all I put in mine. I do make mine really hot. It is easy to make. Sheryl

Salsa

1 gallon Roma tomatoes (5lbs)
4 lrg onions
1/2 cup jalapeno pepper
6 med green bells peppers
6 hot wax or red peppers (I use 3 hungarian hot 3 banana sweet)
1/2 cup vinegar
1 1/2 tsp chili powder
1/2 cup pickling salt
1 TBSP garlic powder
2 tsp white pepper
1 TBSP onion powder
1/2 cup white sugar
2 - 12 oz cans tomato paste
mix everything together in large pot except for the tomato paste. Bring to a boil and then add paste, stir often and cook for 45 min. Fill hot pint jars tight, process in wbc for 15 min. (I keep my clean jars hot in oven set on 170*)
*we like our salsa smooth so I use my food processor on the veggies, you can chop all the veggies for a chunky salsa too. For hot salsa I leave all the seeds from the peppers, for mild I take half the seeds from the peppers...a family fav!! It makes between 8-10 pints....hope you try! Pixie
