Does anybody here at homesteadblogger can apple pie filling? If so how large do you chunk your apples? Does it keep well and is it hard to make? I'm thinking about doing some this year..Thanks

Yes, we do.
We can our own apples, apple sauce, and apple pie filling.
It keeps about one year.
We use a hand 'apple corer', so the apple is cut into about 8 wedges. Good size chunks.
When we make our own applesauce we use honey and we like it chunky!!

I simply use one of those cutters for my apples...it makes 8 slices of an apple, basically, and cores it at the same time. We like thick slices that hold their shape a bit more than some of the thinner slices.
Here is our recipe:
10 cups water
4 1/2 cups sugar
1 cup corn starch
2 tsp cinnamon
1/4 tsp nutmeg, if desired
3 Tbs lemon juice
6# cored and sliced apples (peel if desired -- we do)
Blend all but lemon juice and together and cook until thickened and bubbling -- stirring quite often. Add in juice last.
Pack prepared apple slices into quarts jars, spoon sauce over apples and seal. Process in water bath for 20 minutes.
Repeat the batch of juice mixture as much as needed for quantity of apples. We get our apples cut and packed into jars then keep making batches of the sauce until we are finished :o) We generally do this up many many times during canning season, with bushels of apples. It makes a great pie and apple cobbler come winter!

Apple Pie

I use one of those corer/slicer contraptions..
I don't know the technical term, found it at a yard sale for $5. Works great. Before that I cut my apples into 1 inch chunks.
I cook my apples in a crock pot and I don't add any liquid, just some spices.
