I think you would be fine eating them - my dad only plants/cans beets every other year or so and he eats it.
I try to do my jams on cloudy rainy days - not so hot standing over boiling fruit. is there some reason you think you shouldn't?

That reminds me of my grandma, God rest her soul. She was a big fan of canning everything. She would bring me all kinds of can goods when she would visit us. As I would begin to use these items, I would open them and notice the mold that had occured on the top of the food. I would call her and ask her about it. Her response was always, "oh, just scrap that off and eat it". No matter how much mold was in that jar, she would use it. MawMaw was very old school, didn't waste a thing. Kitty on the other hand, not so much into the mold eating, LOL. But to answer your ?, I would think if it's not moldy or sour, it eatable, LOL...................Kitty

When I first started canning I was told I could keep my canned goods for up to 3 years as long as they were stored in a cool place. I was also told that if I was "ify" about something that as long as they aren't gray looking then they should be fine to eat. I too was told that alittle mold din't hurt anyone to just scrap it off... not sure if I would but if I were hungry enough and had no ther food then I would.
As far as jam, I make my jam on hot days or rainy days or cold days and it always comes out fine.

I've been canning for many years but I don't usually have things left over.I'm with u if I had NO FOOD I would eat MOLD close me eyes and hold my nose..LOL On the jam guess I will make some thanks for stopping by...

I think strawberries and tomatoes are prone to a kind of black "mold" looking like substance. It can grow rather quickly around the edge of a jar of salsa, for example. In the back of the Ball Blue Book it says it's just fine, tomatoes just do this sometimes.
It is always my goal to try to can enough so that it lasts more than a year. :) My pickle relish is from '06 and it's just fine but I'm down to my last jar or two so I need to make more this year.
I think we'd be shocked if we knew how long some of the commercially canned food is in transit and sits on the shelves!

Those vegetables are fine- very much within the safe zone. And as for making jam on a rainy day? That's fine, too. I would even make fudge on a rainy day.
