Pumpkin Apple Muffins

2 1/2 cups flour

2 cups sugar

1 tsp. baking soda

1 tsp. ground cinnamon

1/2 tsp. ground ginger

1/2 tsp. salt

1/4 tsp. ground nutmeg

2 eggs

1 cup cooked or canned pumpkin

1/2 cup vegetable oil

2 cups finely chopped peeled apples

In a large bowl, combine first 7 ingredients. In a small bowl, combine eggs, pumpkin and oil; stir into dry ingredients just until moistened. Fold in apples. Fill muffin tins; bake at 350 degrees for 30-35 minutes or until done.

NOTE--- I sometimes add raisins and walnuts, makes them real yummy!
