• Thursday, August 21, 2008 - Applesauce Muffins

    Since apple season is only around the cornor, I thought I would start sharing some of my apple recipes. These muffins are so yummy! The recipe will yield about 2 1/2 dozen.

                                                            

Applesauce Muffins

                        

4 cups flour

1 TBSP ground cinnamon

1 TBSP allspice

2 tsp. baking soda

1 cup butter, softened

2 cups sugar

2 eggs

2 cups applesauce

2 TBSP vanilla

1 cup raisins

                                                              

In bowl, combine flour, cinnamon, allspice and baking soda; set aside. In a mixing bowl, cream butter and sugar. beat in eggs, applesauce and vanilla; stir into dry ingredients just until moistened. Fold in raisins. Fill greased muffin tins 2/3 full. Bake at 350 degrees for 20-25 minutes or until tests done.

                              

****NOTE- I usually soak my raisins in a bowl with hot water for about 10 minutes, this lets the raisin soften back up and get plump again. I also will add walnuts sometimes.
