Salsa - pg 103

Assemble the ingredients:

4 med tomatoes

2 small onions

3/4 cup chopped chili

6-8 cloves of garlic (optional)

1 bunch cilantro chopped

1 teas dried oregano

juice of two lemons

1 Tbsp sea salt

4 Tbsp whey

1/4 filtered water

The tradition here is that Jenna and I make the salsa.  Here she is blanching the tomatoes for peeling.

And peeling.

jI chopped the rest of the ingredients in the food processor.

Peeled tomatoes being chopped and placed in the bowl.

And after it is mixed we place it in the jars.

Let sit on the counter for 2 days. 

This is a fabulous recipe.  Almost everyone enjoys it and those that don't like it at first like it after it has been refrigerated for sometime.  The last time I made it it sat in the fridge for a month before we ate it.  When I remembered it was in there it was gobbled up.  I am hoping to make my own recipe soon.  I'll let you know how that goes.

Looks yummy! My daughter just said that Jenna is lucky...she gets to cook all the time!

We are letting the saurkraut mellow in the fridge still. We probably will try it later this week.

I'm getting steel cut oats in my co-op order later today, along with bunches of other things!

I have an idea! Maybe you could post some of your kitchen staples. What would you never go without? What type of beans, brand of rice etc. do you use most?

We finally got around to doing the oatmeal this morning & everyone thought it was great! I'm a little behind in your cook-along, but I'm loving that you are doing this! I can't wait for the sourdough...I tried it before and it totally bombed. It made bricks, not bread, for me!

Anyway, I have a question about whey & I'm hoping you can answer it. I am trying to make whey & cream cheese. I have a jar of raw milk that's been sitting out for a couple of days. What exactly am I looking for to know that it has "separated"? It must be more than just the cream separating out, because that happened right away. How do I know it is ready to be poured through the dish cloth? Thanks for any help you can give!
