Diane, Not sure about the bag of water.I’ve only ever made saurkraut the NT way.
Motherearth, I don’t know why it would have bubbled over.I always leave an inch and I have never even seen it expand.Maybe next time try an inch and see if it works.
Anonymous, I’m not sure why your whey would have molded.We have never had that problem.We always leave the lid on and let the raw milk sit on the counter for a couple days. Perhaps the towel allowed yeasties in? We let it seperate and then dump into a towel sitting in a strainer. After the whey has stopped dripping (a couple hours) then we tie up the towel and suspend over the bowl.
Margaret, NT is a bit misleading with the sauerkraut when they say that the liquid should cover the cabbage.It shouldn’t exactly cover the cabbage but be moist.I’ve never had exorbitant amounts of extra liquid in there.If you push the cabbage down with a spoon is there liquid that comes to the top?That is the best I ever got it and it worked just fine.
All you ketchup people need to wait for the actual cook along date.I posted the whole tutorial and made it so only *I* could see it (as I have done with the others that are coming up) but for some reason HSB wouldn’t take it.So I tried again to post just one pic and leave it so you guys can see it.It worked.I’m not sure what will eventually work.I have the original saved in Word and when I C&P to HSB it shows it there UNTIL I press Add New Entry.Maybe I can trick it by adding a little bit at a time? ;)

I will post instructions for the sourdough starter on the 19th along with the ketchup and mustard so you will have time to get it going before baking sourdough bread the next Monday.You will need rye berries/flour, water, a large bowl and a towel to cover the top of the bowl.
Thanks again for playing everyone. I’m having a blast.I’ve had a couple technical glitches that have kept me from getting some things up on time but I am hoping by loading them up early we can avoid that in the future. J

I do it the pound with a wooden mallot way and always have a good amount of liquid at the top of jar after I have packed the kraut in. I don't think it will hurt anything if it isn't totally covered as in vinegars, oils etc.

I just found your blog after doing a google search of homeschoolblogger and nourishing traditions. I am so excited to have found you and look forward to learning how to do this nourishing traditions thing. I've been wanting to order that book from amazon and will hopefully be able to do that soon. I can't believe you are new to MO as of four weeks ago! We just moved here from Houston TX to rural Mo Sept. 29th! (and are a homeschooling family too) What I can't believe is that you have 11 children and are already blogging and taking these pictures of your beautiful children while making these meals from scratch! Oh I feel so intimidated and far from the goal. :( We've got a jillian boxes around here still. I haven't had time to read thru your entire blog yet, as I get some quiet moments I look forward to doing that. In the mean time, I noticed on your first entry here that you were selling your home in AZ at auction. We too, really need to sell our home back in Houston. Would you mind emailing me and letting me know if you did end up doing that and how it went? Or if you blogged it and don't feel like typing it over could you sent me the link to the entry? I would sure love to meet you and your family sometime. It would be fun to do some nourishing tradition meals together sometime. I am a raw food failure (as I sit her with a dr. pepper! I just went 26 days without one!) so I was so relieved and heartened to read that comment from Kim that Serene Allison is doing more Nourishing Tradition type meals. I know her mom doesn't eat meat. I'm trying to find our what is best for me as I was attempting to be a pure raw foodist and it just didn't work for me and my family. Sorry for the long post. In Jesus' love from a sister in Christ,

Looks like I stumbled onto something great! I too have recently made sauerkraut. I have also been experimenting with sourdough. I'm a NT newbie and am not sure just how far we'll be able to go with it, but it certainly is an interesting read!
