Lentil soup

I'll post Betty Crocker's recipe and then I'll post Kristina's doctored up recipe.
Lentil-Spinach Soup from Betty Crocker 2 med onions 1 clove garlic 2 tbs olive oil 3 cups water 1 teas salt 8oz (1 1/4 cup) lentils 1 teas lemon peel 2 teas lemon juice 10oz (4cups) fresh spinach
Chop the onion and garlic and saute in olive oil. Add water, salt and lentils. Boil until lentils are soft, about 20 minutes. Take off heat. Add lemon and spinach. Mix well and let rest for 10 minutes.
Doctored up lentil soup. Change the following: Use homemade chicken broth or veggie broth instead of water. The veggie broth is really yummy if you cook a bell pepper in with it. Veggie broth makes the soup thick and wonderful. Cumin to taste Real cocoa (about 1 tbs) I always add WAY more salt then 1 teas. Place jack cheese in the bottom of the bowl and ladle soup over.
