Healthy eating!!!

Jillian eating stuffed eggplant.  This dish is VERY similar to stuffed bell peppers only not quite as tasty to those of us that don't count eggplant among our favorite foods.  Everyone raved about the filling though.  Jeff made this dish.  That is a yummy mixed lettuce salad that we all enjoyed!!

That same day I made saukraut.  Do you know how healthy fermented veggies are for you?  And not the store bought nasty vinegar stuff.  We are talking true lacto-fermented veggies!!  YUM-O!!  Junie, Jillian and Josiah putting cabbage in the food processor.  Donut is learning from his older brother and sisters.

 

 

And here we are jarring the cabbage mixture.  Junie, Josiah, Joshua, Jillian and me. :)  We let it sit on the counter for 3 days to ferment and then we ate it with bratwerst!!  WOO HOO!!  So yummy!!

 

Here is a meatball meal we had.  I got the recipe from www.allrecipes.com.  I don't remember exactly which recipe I used but I know it had pepper jack cheese and you pan fried the meatballs.  It took forever to make and tasted amazing.  We served them over white rice with tomato sauce and steamed zuchini and cauliflower.  Everyone requested this one again soon.

 

Tonight I am making lasagna.  Do you know how long it has been since I made lasagna?  the last time I made it (years ago) I gave each kid a disposable pan and we made individual lasagnas.  It was so fun as they would try to save some for their next meal and it was a real treat.  I'm doing a family size lasagna tonight.  I accidentally bought entirely too much mozzarella cheese.  I bet I can remedy that tonight. :)

I love that you are getting the kids into the act of cooking up the healthy foods for the family. I made up a jar of kimchi and a jar of apple chutney today. I kept shoo-ing my kids away because they were breathing all over the food. I guess I should let them get in there and help chop, shred, and pound the veggies. We are about to eat a batch of NT stuffed peppers :)

One question for you...were you scared to eat your fermented foods at first? I am! Ok I fibbed I have two questions. THe second one is do you have a favorite bread recipe?
