German Fresh Apple Bread

1 c. flour (I used 1/2 c. all-purpose & 1/2 c. bread flour)
1 t. baking soda
1/2 t. salt
1/2 t. cinnamon
1/2 c. shortening
1 c. sugar
2 eggs
1 c. dark and tender apples, finely chopped
1&1/2 T. evaporated milk (I used reg. 2% turned out fine)
1/2 t. vanilla
1 c. chopped nuts
Topping: 
1 T. sugar
1 & 1/4 t. cinnamon

Cream shortening and sugar; add eggs and mix well.  Stir in apples, milk and vanilla.  Mix dry ingredients together then stir into batter.  Do not overbeat.  Fold in nuts.  Pour mixture into a greased bread loaf pan.  Sprinkle topping over raw batter.  Bake at 350 degrees, 50-60 minutes.
