I have put up yet another batch of spaghetti sauce. The first batch that I made I was able to make eight quarts and with this batch I was able to make 12 quarts so that in it's self was a blessing. It is a very time consuming process but the taste of the sauce is worth all the trouble. We had Mission's Day at the church Sunday and I took spaghetti. Well all of the sauce was gone but there was still alot of the noodles left. I am telling you this is some very good sauce. I had a member of my church actually tell me that he would buy some of it from me. We were running low so my husband insisted that I make him some more. Well I am through rambling for the day. I wanted to take a few minutes to post some pictures from the fair. The NC Mountain State Fair takes place every year in Fletcher and we had alot of fun. My youngest daughter is finally starting to get at the age where she enjoys riding the rides and stuff. I thought that you might enjoy some of the pictures that we took while we where there.

It has been awhile since I last wrote so I thought that I would take a few minutes to write a little bit. We have started a new way of getting everything done. Both of my children love stickers and so I have made charts for their schoolwork as well as their chores and it seems to be working!! My children are the type that if they have motivation and they know that they are getting something out of completing diffrent tasks they are more apt to complete them. Yesterday was Labor Day, (as you already know) and I took the girls to the King Apple Parade in Hendersonville. It began at 2:30 and in order to even find a parking spot we had to park about 10 blocks away. This was OK though because I can really use the exercise. My girls really love the parade so it has become somewhat of a tradition around our house. We got home at about 4:30 and I had to quickly fix supper and get me and the girls ready again because a couple of the members of our church had a death in the family. Needless to say it was a very busy day for my family. I was so proud of my little girls. They acted like such little ladies while we were at the visitation. While the other children were running around like wild commanches my little girls stayed right with daddy and momma. All the hard work and prayers we have put into our daughters is finally beginning to pay off. I just had to take a second to brag on my angels Being a deacons wife can be alot at times because it can be very busy and stressful but at the same time very rewarding (if that makes any sense) If anything is going on with the church I am excpected to be there. Do not get me wrong I love my church and the people are wonderful but it can become quite stressful. I wish to be a good example to the young ladies of the church. With God's help I can do just that!!! I am going to try to get into the habit of writing at least a little bit in my blog everyday. I am now in the process of working on a quilt for my brother's new baby which is due on December 22. (A christmas baby). This is the first quilt that I have made completly. I am still working on a quilt that I actually started on when I was about ten. It just seems that sometimes I get to busy to finish projects that I start. I really do need to get on top of finishing that one as well. But once I have finished this quilt for the new baby I will post some pictures of it for you to see. I am rather proud of it. I am doing all the work by hand. I do have a sewing machine but I thought that it would be a more thoughtful gift if I did it by hand. My mom's birthday is tomorrow and me and my sister are planning a small birthday party for her on Friday. She is a CNA and I was going to get her some new scrubs for her birthday but she got her hands on a whole lot of them so she does not need anymore at this time. So she told me to get her a new pair of Crocks. I will have to think of something else to go with that but I think that she will have a nice day, none the less... Homecoming is Sunday at the church and I have finally decided on what I am taking. My husband was looking through my cookboooks and he wants me to a dish called Baked Spanish Rice and is as follows: Baked Spanish Rice 4 Bacon Slices 1 cup chopped onions 1/2 cup diced green peppers 1 16oz. can of tomatoes water 1 8oz can tomatoe sauce 2 tsp. sugar 1 tsp. salt 1 1/3 cups regular long grain rice 1/2 cup shredded Cheddar cheese 1. Preheat oven to 350 degrees. In a 12 inch skillet over medium heat, fry bacon crisp; drain on paper towels; crumble and set aside. Pour off all but 2 tbls. drippings. 2. In hot drippings, cook onions and green peppers until tender, stirring often, about five minutes. 3. Into measuring cup, drain tomatoes; add enough water to tomatoe liquid to make 1 1/4 cups. Cut up tomatoes. 4. To onion mixture, add liquid, tomatoes, tomatoe sauce, sugar, and salt; heat to boiling. Grease 1 1/2 quart casserole. 5. Remove from heat and stir in rice; pour into casserole. Cover; bake 35 minutes or until rice is tender and liquid is absorbed. 6. Fluff rice with fork; sprinkle with cheese and bake five minutes. Garnish with bacon. It looks like a beautiful recipe and this will be the first time that I have tried it but I am sure that my church family will love it!! For a dessert I am fixing a dish that my husbands step mother fixed for him when he was a little boy and he loved it. I am not even sure of the name of it but it sounds delicious!! Pam's Pistachio Desert 1 large tub of whipped topping 1 small bag of minature marshmallows 1 large can of crushed pineapples; drained 1 large box of pistachio instant pudding 1 can of marichino cherries 1 can of sparay whipped topping 1. Make the pudding mix by the manufacturers instructions. 2. Mix all ingriedients together except for the cherries and the spray whipped topping. Cover and put in the refrigerator over night or make early in the morning and let it set in the refrigerator all day. 3. Now it is time to decorate your delicious dessert. Spray the whipped topping in litle patches along the outside edges of the bowl. Then put a cherry into the middle of each of the the little mounds of whipped topping. Eat and enjoy. I, myself love pistachio's so I can only imagine that it is a delicious dessert. My husband is always talking about how good that it is though. I will definetly tell everyone how both of these dishes taste after our Homecoming Dinner Sunday. Hello everyone. I wanted to take a few minutes to tell about yesterday and what we do around our house on Mondays. We have set aside Mondays as our big cleaning day and boy do we stay busy on Mondays!! We have three bedrooms and two bathrooms so me and my oldest daughter clean everything on this day with a little help from my four year old. Living room: dust and clean under and behind all furniture feed and clean out fish tank water all plants remove cobwebs clean fan vaccuum use carpet cleaner on carpet Kitchen wash dishes cobwebs clean all counters clean out refrigerator clean fronts of cabinets and organize (they are white so they get very dirty) remove clutter sweep/mop the floor Bathroooms cobwebs dusted down clean toliets empty trash clean counters scrub the bathtubs/showers clean mirrors empty litter box organize under cabinets floors vacuumed/swept/mopped Laundry Room organize all cleaning suppplies clean surfaces seep/mop floor remove cobwebs (we have a bad spider problem) clean door Bedrooms remove cobwebs clean up trash in bedrooms put all clothes and toys away dust change sheets vaccuum make sure dirty laundry is in the dirty clothes Like I said before Mondays is our big cleaning day and this list keeps us pretty busy. In the process of doing this list we are also doing laundry to. I have found that if you set aside one day a week to do a good cleaning it stays pretty well clean the rest of the week with straightening up every day. This cleaning schedule works well because I also homeschool and that way I can give my daughter all my attention without having to clean all day. We will soon be getting chickens and I have started doing research and listening to what others have to say about the whole chicken process and I would love to see what everyone else thinks. I know that Rhode Island Reds are a good breed to have but can anyone tell me of others that would do well in Western North Carolina? I think that it will be a good experience for my girls. I know that they love my sisters chickens and even she told me that chickens are not that much trouble. Well I hope to hear from you soon and remember to take time to smell the roses!! I just wanted to pass along a book that I m in the process of reading that I thought some of you may be wanting to read. I actually came across it in some of my flea market stuff but hopefully it can be borrowed from the library. It is called Amish Folk Remedies for Plain and Fancy Ailments. By: William R. McGrath. It is packed full of home remedies and other useful tonics and whatnot. For example on page 22 it tells us how to preserve fresh flowers!! If you bury fresh flowers in dry sand for 2 weeks they will become permanetly preserved and may be made into attractive bouquets that last all year long!! I thought that was so neat. But anyway I will let you go and hopefullyyou will get your hands on this book. It is very interesting!! May God Bless You, -tracym- |

Today is a new day and I thank God for giving it to me. Yesterday I put up spaghetti sauce and that is an all day project!! My sister gave me the recipe and I must admit that it was worth the wait!! That was some good spaghetti sauce. The only sad thing was that a whole pot (a very big pot at that) only made about 8 quarts. My husband said that it tasted better than any that he had ever eaten. I think that I will probaly have to end up making more because he is wanting to give some to a couple of people. Maybe now that I am done canning for a little while life can begin to get back on schedule (somewhat) Well I hope that you have a wonderful day and May God Bless You!! This is my first year of actually canning anything and yesterday afternoon my mom came down and helped me learn how to can tomatoes. I must admit that I enjoy doing things like this and will continue to do it year after year. We purchased the tomatoes from the Farmer's Market in Asheville. I purchased two boxes of canning tomatoes for $6.00 a box. I will probaly have to end up going back to get another box because I am also planning on canning some spaghetti sauce. So far we have made eight jars because my mom had to go to Visitation of a death of a member of her church. I am going to can some more today. Well I do believe that I am done for right now. Saturday we attended an activity in Asheville called Youth Conservation Day. The children learned alot of very interesting things. e Here is Caitlin trying out a turkey call
The girls even got to shot at the shooting range. (with beebee guns)
They even got to try archery!! This was definetly a feild trip worth taking. The event started at 8:30 and there were diffrent stations set up. There was a duck hunting presentation, fishing, a coyote hunting class, shooting, turkey hunting class, and archery. They even offered a lunch as well. You had the choice of a hamburger or deer burger. A hot dog with wild game chilli, deer meat, wild hog, and a wild game stew. After lunch they had raffles and gave away a lot of really nice things. My girls won a fishing pole and the Cassie won a nice sleeping bag and a duck hunting video. This will be an activity that I continue to attend year after year. You know what the best part was?
