Frugal Fair

With the cost of fuel, not to mention the events and food, a simple outing can cost a fortune! So as often as we can, we bring the events to us! This past weekend we went to “the fair” ala Monopoly Jr. 

and even had some delicious funnel cake while we were there! And we didn’t even get rained out! J Have you bought funnel cake lately? With even just 4 in our family, it can easily add up to $10, and for what? Some flour and milk? Here is a recipe to make it at home.

 

Funnel Cakes

 

Mix:                 3 cups flour

                        ½ cup packed light brown sugar

                        2 t baking powder

                        ¼ t salt

Wisk in:            2 ¼ cups milk

                        2 large eggs

                        1 ½ t vanilla

 

Heat oil, about 2” deep to 400 degrees (I use my Fry Daddy). Holding finger over spout on funnel, fill with ½ cup batter. Slowly release batter in squiggle fashion into hot oil and turn when golden brown. Cook other side for just about a minute, and remove from oil to paper towel lined plates. Sprinkle with powdered sugar when ready to serve.  This recipe makes about 8  - 8” round funnel cakes.

Favorite Soup Recipes

Cold weather dictates a pot of soup bubbling away on the stove. These are some of my favorites.

 

Plaza III Steak Soup

1)       In microwave, melt one stick of butter and whip in 1 C flour to make paste.

2)      In big pot cook 1 pound of ground beef. Drain and add 1C chopped onions, 1C chopped carrots, and 1C chopped celery.

3)      Add ½ gallon of water, and butter/flour paste.

4)      Add 2C frozen mixed veggies, 1 can diced tomatoes, 2 beef bouillon cubes, 1T pepper

5)      Bring to boil. Lower heat and simmer till veggies are done. 

 

Minestrone Soup

1)       fry off 2 onions, chopped and 3 carrots, sliced.

2)      Dice up about a ¼ head of cabbage and add to pot. If you have fresh spinach or kale, chop up and add also.

3)      Add 6 cups water, 1 can stewed tomatoes, and 1t thyme

4)      Add 1 can of kidney beans w/ liquid and 1 can white beans with liquid

5)      Add 2 vegetable bouillon cubes, 1 10oz. box of frozen chopped spinach (if you didnÂ’t add fresh), and 1 cup of small pasta (alphabet, orzo, ditalini, etc.)

6)      Boil until pasta is cooked.  

 

Potato Soup

1)       Melt one stick butter and fry off 2 carrots, diced, and 1 onion, diced.

2)      Add 2T flour and 2 quarts water.

3)      Add 8 potatoes, peeled and diced, 1T veggie flakes

4)      Boil until veggies are cooked through.

5)      Add 1 can condensed milk, 1t parsley, and pepper and salt to taste. Heat through.

Note: this is good if you have left over ham – just chop it up and throw it in.

 

 

Chicken Soup

This is a throw together. Fill stockpot half way with water and boil whole chicken. When done, remove chicken and de-bone, de-skin, and cut to bite size pieces. To broth add lots of chopped carrots, chopped celery, and chopped onions. Add chick bouillon cube, 1/2t garlic powder, salt and pepper to taste. Add cooked chicken pieces back to soup, along with 1 cup instant rice and ½ package of egg noodles. Cook till rice and noodles are done. This is a thick, hearty soup. May need to add water if you like it more brothy.

Make Ahead Meatballs

MAKE AHEAD MEATBALLS

 

4 eggs

2 cups seasoned bread crumbs

½ cup chopped onion

1 tablespoon salt

2 teaspoons Worcestershire

½ teaspoon pepper

4 pounds ground beef

 

In large bowl, beat eggs. Add rest of ingredients. Shape into 12 dozen 1” balls. Place in single layers on baking sheets. Bake at 400 degrees for 10-15 minutes, turning often. Cool. Put balls in Ziplocs and freeze for later use in:

Spaghetti and Meatballs

 

MEATBALL APPETIZERS

 

Combine:            1 cup ketchup

                         Â¾ cup brown sugar

                                  1 teaspoon garlic powder

 

Pour over 30 meatballs in baking dish. Cover and bake at 350 degrees for 1 hour. Serve with toothpicks or on rolls. Also good served on egg noodles. (These also freeze well in the sauce)

 

SWEET AND SOUR MEATBALLS

 

20 ounce can of pineapple chunks

½ cup water

3 Tablespoons vinegar

1 tablespoon soy sauce

½ cup packed brown sugar

3 tablespoons cornstarch

30 meatballs

1 green pepper cut in 1” pieces

1 can stewed tomatoes

 

Drain pineapple, reserving juice. Set pineapple aside. Add water to juice to make 1 cup. Pour into large skillet. Add 1/3 cup water, vinegar, soy sauce, brown sugar, and cornstarch. Stir until smooth. Add pineapple, meatballs, green pepper, and stewed tomatoes. Simmer uncovered for 20 minutes till heated through. Serve over rice.

Bread Machine Cinnamon Rolls

These are soooo good on a cold morning...

 

Bread Machine Cinnamon Rolls

Place in bread pan in order specified:

1 cup water

2 T softened butter

1 egg

3 1/3 cups bread flour

¼ cup sugar

1 t salt

3 t dry yeast

Run through dough cycle in machine.

Grease 9x9x2 pan. Combine 1/3 cup sugar and 2 t cinnamon. Roll dough into 18x9” rectangle. Spread with 2T softened butter, and sprinkle with sugar mixture. Roll up tightly, beginning at 9” side. Cut roll into 1” slices and place in pan, cut sides up. Cover and let rise in warm place for about an hour. Bake at 375* for about 25-30 minutes. Remove from pan and drizzle with glaze if desired.
