Southern Cornbread Dressing

Southern Cornbread Dressing

1 pan of cornbread crumbled
6 homemade biscuits crumbled
1c. celery
1 small onion chopped fine
6 hard boiled eggs chopped fine
3-4 c.broth (chicken or turkey)
salt and pepper to taste
1tsp. sage (or less)
2 TBS. (melted in pan before cooking)


Mix cornbread and biscuits, add celery, onion, and eggs.  Toss well.  Add broth.  The mixture will be soupy.  Sprinkle the seasonings and stir again.
Melt the butter in a 9X13 pan and then add the mixture. Bake at 425* for around 30 min.  The cornbread dressing should be golden brown on top.

 

******I omit the celery, as we don't like it.  I also put in 3 raw eggs instead of boiled eggs.  DH can't tolerate the boiled eggs.  I usually cook a chicken for broth.  Then I pull the cooked chicken and add it to the dressing.  So it is chicken dressing.  We serve this with cranberry sauce.  Oh, it is soooo good.

Okay...after reading your recipe I just had to go look at your profile to see where you were from. My instincts were right! We're both Mississippi gals! My dressing is almost the same as yours and I can not wait til Thanksgiving to eat it! Dressing is one of my favorite foods of all.
