What to do with eggplant....

Well, we have the eggplant coming in now and I was looking for recipes.  First, I just fried it like fried green tomatoes and that was good but last night I made Eggplant Parmisan.  Oh, my, it was so good.

Eggplant Parmisan

1 eggplant

1 3/4 t. salt

1/4 c. olive oil

3/4 c. ricotta cheese

3/4 c. mozzarella cheese

1/4 c. parmesan cheese

1 T. Italian seasoning

1 egg beaten

1 1/2c. pasta sauce

Sprinkle both sides of eggplant with salt and put in a colander to drain all liquid for 30 minutes.  Preheat oven to 350*.  Mix together ricotta, mozzarella, and parmesan.  Mix in egg and Italian seasoning.  Rinse the eggplant in cold water.  In a skillet, heat olive oil and brown each side of the eggplant.  In a 9 X 13 pan put the spaghetti sauce in the bottom and then layer eggplant and cheese mixture.  Top with parmesan.  Bake at 350* for 30-45 minutes until golden brown. 

We really enjoyed this even my picky eater!!!

I love fried egg plant, after you fry it add a sprinkle of sugar for add goodness. I also make a dressing type dish with mine. I did this day before yesterday.
Peel and dice the egg plant (about the size of dice) and cook this down with onions and peppers till tender. Brown a pound or so of ground beef or turkey, drain and add to the egg plant. Let this cook down till everything is done, about 20 or 30 minutes. Add two or three cups of cooked rice to the mix. You can serve it like that or put it into a baking dish and put bread crumbs over it and brown the crumbs in the broiler for a few minutes. UMMMM good, love this stuff.
