All time summer favorite....Zucchini Bread....Picture

I made this this morning....

Zucchini Bread

2 c. shredded raw zucchini

3 eggs

1 1/4 c. raw honey

1 c. melted butter

2 c. flour

1/4 tsp. baking powder

2 tsp. baking soda

2 tsp. cinnamon

1 tsp. salt

2 tsp. vanilla

1 c. chopped walnuts (optional) if we use nuts its usually pecans

Put zucchini in a strainer and press with hands to get excess liquid out.  Beat eggs, sugar, and butter together.  Add flour, baking powder, baking soda, cinnamon, salt and vanilla.  Mix together by hand.  Add drained zucchini.  Mix well.  Pour into 2 greased and floured loaf pans.  Bake 55-65 min. at 350* or until toothpick comes out with very little cake on it.

At the top of the bread is an arrangement that my middle DD made last week with one of her sunflowers.  We love sunflowers.  They are just so happy looking and they look good for weeks cut.

A wonderful way to use up zuchinni - especially when they grow so big & fast before you get to eat them all.
