Strawberry Jam

I was asked for my strawberry jam recipe and here goes....

First I washed, cut off stems and hulled 8 pints of strawberries.  Then I mashed them.  I don't mash too much, as we like our jam fruity.

I put 5-6 cups of fruit in my stock pot with 1/4 cup lemon juice, 1 box plus 1/3 box of pectin, sugar, and 1 T. butter.  I bring all of this to a hard boil for 1 minute.  I laddle this into half pint and pint jars.  I then water bath can them for 10 minutes.  It is a mundane process but really pretty simple, after you get going.  One other thing, I usually use Sure Jell but this time I picked up the Ball pectin.  It did just as well.

So is that 5-6 cups of the mashed fruit, then? And you don't add sugar? I'm loving that! I have a recipe for jam that calls for TONS of sugar. I have never made it because it just seems like sugar overload to me. It even says not to use less sugar because it will make the pectin not gel or something like that. I'll have to save this recipe and give it a whirl. Thank you!
