New canner, what fun, what fun....

I ordered a new water bath canner from Lehman's. It just came in the mail yesterday and I tell you, I have had sooo much fun with it. I have used a stock pot in the past. I just had no idea what I was missing. My DH gave me the ok to order one and voila.... It came with a stainless steel funnel, jar lifter and the Ball Blue Book. That book is worth the price. I canned 4 pints of blueberries and 1 quart of tomatoes. I also froze several bags of squash, peas, okra, and corn. It is just getting busier and busier. I am sooo thankful. I shelled peas this morning for 3 1/2 hours and am still not done. There will also be more to pick today. Again, I can not tell you how thankful I am that God is so good to provide. We need rain desperately here, but the garden is still making. We are praying daily that He will send some. Watering is just not the same as rain. I can't even imagine how hard it must be on the farmer's to go this long without a substantial rain. Nevertheless, my freezer is getting full. I am putting up everything I can. I ran out of peas this year in January. I want to try to make it from season to season, without running out. I'm just not sure how many that takes....

I love your blog! So how did you can up the blueberries? Did you add sugar, or just can them up as is...or did you make jam? Also, how do you freeze squash? I thought it would get mushy.

I just put the blueberries in after blanching them. I addes enough water to fill the jar and 1 tsp. of sugar. As for the squash, it does get mushy, however we eat it kind of steamed with butter and chipped up onion. Soooo good.

when I got my canner (pressure - that is all my mom has ever used, so that is what I use. I want to learn boiling water too... I think that'll be cheaper and faster for fruits, etc) I was sooo excited. I just stared at it for a week or so before I had stuff to can. And I LOVE LOVE the blue book.
