Budget Friendly supper....

Since moving to the new homestead, our expenses have triple as far as groceries and gas. I have had to be creative as far as groceries are concerned. I am literally spending a fortune and can not wait to get some deer in the freezer but until then, we are trying to do some meatless dishes. Here is tonight’s recipe, super easy!!!!
Black Beans and Rice
I soaked my black beans all day and put them in a bean pot at about 3:00. I covered them with water about 2 inches above the beans. I added salt, pepper, garlic powder and 1 Tbsp. of oil and started to boil them. I turned them down to a simmer after bringing them to a boil. I simmered them for about 2 1/2 hours. After about an hour I started my brown rice. After the beans and rice were cooked, I added some rotel to the beans and simmered it for about 15 minutes. In a bowl I put rice and then topped it with the bean mixture. We added cheese and sour cream to our beans and rice. It was so delicious. We don't feel deprived at all.

Sounds like some good old meatless dinners are on the way huh?? LOL I completely understand. We have started doing Meatless Mondays at our house!!! Pancakes, French Toast, and of course all the rice and bean type dishes are on my list, but so are cheese pizza, salad night, loaded baked potatoes. And ya know what??? I never told hubby I was doing this......and he has never realized it either. LMSO

Sounds good, Hum! I would just make a pan of corn bread and call that supper! But what is rotel?
Oh and I was gonna tell ya that those preserves might taste too sweet when you taste them warm, but after they get cooled down and been in the fridge, they won't be too sweet ( especially on a hot buttered biscuit) I hope they turned out good for ya!

Sounds like the solution and one that is good Trixi. Being creative is fun when you do it with great intentions. I thing most people are seeing things differently more than before due to the fact things are getting more costly. I haven't felt the crunch due to the fact it is just me and hubby. I only go to town twice a week so gas isn't an issue with me either. Sending God's riches and best your way as you create and make your lives better in many ways. Lovingly, rilda *U*

We love, love, love black beans & rice! It is ever so yummy & so good for you!!
We had them last night with brown rice and also some chicken quesadillas.... yum!
