The Dehydrator's Humming...

The sunporch smells soooo good right now!! Jeff and Melanie went out to pick the first of our lemon basil from the herb garden to dry. We've got 3 trays going. It smells heavenly out there. I'm going to try to get as much dried and in the pantry for my own spices this year. What an exciting prospect!
I found a book called Mary Bell's Complete Dehydrator Cookbook that sounds awesome to go along with the new appliance. I think I might just have to get my hands on a copy.

Lemon Basil is one of the herbs I'm growing this year on my back deck...I have never used it before...can u give me any ideas? So should I dehydrate it first, or is that just so you can keep it around a good long time? Mine is getting taller than my genovese basil (sp?)...I also thought I had planted cinnamon basil, but it smells more like licorish (sp?), so not sure what I've ended up with. We have made one batch of pesto sauce w/the genovese basil so far and it was really good.

Hey Teresa,
Thanks for stopping by...This is the first year I've ever used lemon basil myself. I've been using it with pasta and such. A pesto with it would be really good I think. I started dehydrating it because it started to go to seed and I wanted to save some of it. Good luck!

I will admit I don't use my dehydrator near as much as I should, but then again, I have no garden harvest to dehydrate anyway. Mine isn't fancy, just one of the older American Harvester ones.
What I'd like to start doing is collecting some fruits and such and setting them aside....and the herbs!
