:: Butternut Shortbread Bars

1 cup packed brown sugar
2 cup all purpose flour
1 tsp baking powder
1/2 tsp salt
2 egg whites
1 cup chopped nuts

Place butter and brown sugar in bowl.  Mix, add flour, baking powder and salt.
Knead mix until soft dough forms. 
Press dough into a greased 10 1/2 x 15 1/2 x 1" jelly roll pan.
Glaze dough with beaten egg whites, lightly.
Sprinkle with nuts, cover and bake at 375 20-25 minutes
Cut bars while warm.
Enjoy

3 cups cooked and mashed sweet taters or you can substitute pumpkin, butternut or winter squash.
1 cup sugar
2 eggs
1 tsp vanilla
1/2 cup butter
touch of cinnamon, allspice and nutmeg

Topping
1 cup lite brown sugar
1/3 cup flour
1/3 cup butter, melted
1 cup chopped pecans

Mix all well, put into 9 x 13" baking pan.  Mix topping and spread over top.
 Bake at 350 for 45 minutes.
Enjoy




:: Mock Cheese Cake

1 yello or white cake mix (without pudding in it)
4 eggs
1 stick of butter
1 box powdered sugar
1 package cream cheese 8 oz
1 tsp vanilla

Mix the cake mix with 1 egg and 1 stick butter, then press into a greased pan
Mix 1 box powdered sugar with cream cheese, 3 eggs and 1 tsp vanilla
Pour over cake mixture
Bake at 350 for 30-35 minutes or until lightly browned
You may serve as is or add the topping of your choice.
Enjoy.



:: Homemade Puppy Biscuits

My little boy Hunter
Oh how he loves his treats.
He begs his mom each day
and even tries to sneak.
I made these yummy biscuits
he just couldn't wait.
By the time they'd cooled
enough for him to eat.
He was begging shamelessly
Even stooped to licking my feet.

3/4 cup hot water or meat juices
1/3 cup butter or oil
1/2 cup dry milk
1 egg beaten
3 cups whole wheat flour or 1 1/2 cup whole wheat and 1 1/2 cup corn meal
Preheat oven to 300-350 depending on your oven.  Mine is gas so around 325 works well for us.  Grease the cookie sheet.  In a large bowl, pour hot liquid over butter or oil.  Stir in the dry milk, and the egg.  Mix well, then add flour 1/2 cup at a time.  Mix well.  The dough will be stiff.  Pat or roll to 1/2 " thickness.  Cut into shapes or handpress them into shapes.  Place on cookie sheet and bake 40-50 minutes.  Turn off the oven and let sit in cooling off oven for 1 hour. 

Alterations:
Add peanut butter instead of the oil/butter
Add oatmeal, cooked or uncooked
Add grits cooked or uncooked.
It's a great way to use up breakfast oatmeal, grits or cream of wheat that's left over.
You may have to adjust your liquids some to be able to mix well.  Just keep the dough on the stiff side.
Hunter just loves these, and they are way cheaper and better than store-bought.

I'm working on kitty treats but so far have not mastered one for our oh-so-finicky cat.  Here's a pic.  Looks like he really needs treats huh.
