:: Italian Bean Stew![]() Serves 8 Basic sauce recipe * Extra Virgin Olive Oil (EVOO) 3 times around the pan * Cilantro, Sage, Italian Seasonings, fresh if possible but dried will do nicely. Add to taste. I'm not a big measurer, that's how I learned from granny. Sorry. I guess start with a teaspoon of each and go from there. * 1 large onion diced or rough cut depending on your taste. * 2 teaspoons of minced garlic. I use the kind you can buy in the small jars already minced since I had no fresh garlic this year. I guess it would be about 2-3 cloves minced or to taste. Can be omitted if you like. * 1 large can red beans, drain and rinse * 1 large can white beans, drain and rinse * 1 large can kidney beans, drain and rinse * 2 large cans stewed tomatoes * 2 cups V8 juice * 1 large can tomato sauce * 2 32oz size cans of chicken stock. * Ground chicken, pork, beef, turkey. Any combination or none at all depending on your family and their taste. * Carrots sliced, 2-3 large if fresh, 8 oz or more if frozen, 16 oz if can or to taste. Par boil in the water, then remove till later. Saute the onions and garlic in the olive oil until onions are transluscent, garlic not burned. Add the sage, cilantro, italian seasonings to the mix. Stir well. Add the wet ingredients and the carrots, stir and simmer 45 minutes. While the sauce is cooking, season the meat with salt, pepper, garlic, italian seasoning, and cook in another pan. Drain and hold. Once the sauce has simmered 45 minutes, add the meats and cook another 45 mins. on simmer. About 15 mins before sauce is done, cook rice or noodles, whichever you prefer. Set aside when done to add the sauce over. We like it over Jasmine or Basmati rice but you can serve it over noodles, long grain rice, yellow rice, or by itself. This recipe is very forgiving. You can add or take away just about anything you want. If you want alot of tomato gravy, add more tomato sauce, if you want less, add less. Thin with water, beef or chicken stock if needed, depending on your taste. Serve with rolls or breadsticks. ![]() { Last Page } { Page 31 of 50 } { Next Page } |
