Cooking today......
Today we have an older gentleman retired from work and so a few of us ladies are going to make him a retirement dinner. He asked me do you know how to make a good spaghetti? Yes, I do, I replied so I will make him my baked spaghetti. Now since I work all day I need to find a way to get it their and have it warm. Now that is the tough part.
Also, Monday was my daughters 15th birthday and tomorrow is my mom's birthday so I am going to make a cake. I am going to make a jello cake.
This is a simple recipe:
One white cake mix fix as usual, while the cake is cooking make your jello (I am making strawberry) this way it cools down to room temperature. After the cake is done let cool for about 15 minutes or so. Poke holes in the cake for a meat for or something like that. Pour the jello over the cake and refrigerate. When the cake is cool and set top with cool whip, I am also topping with fresh strawberries.

Supper on a cool night.....
The other night it was a cool night and we wanted something comforting. My youngest said mommy will you make fried cabbage, with potatoes. I thought, hmmm. Well, I had the bacon, and potatoes. So while I was in town I picked up a small head of cabbage, and a Vidalia onion. I had biscuits in the fridge. So when we got home in a large skillet, I cooked up six pieces of bacon, once the bacon was done, I took it out and added slice potatoes, onions once that was tender I added shredded cabbage. Seasonings I used minced garlic and natures seasoning. As that was cooking I baked by biscuits. It was so good and comforting on a cool spring evening.

Tuna Noodle Casserole
This is one of my childhood favorite meals. I am not sure where my mom got this recipe but it is simple and easy. I like that!
2 large cans of white tuna in water, drain and pre cook till the tuna turns white. This helps to make sure all the germs are killed. At least this is what my mom taught me as a child so it must be right.
1 large package of wide noodles
1 large can of cream and mushroom soup/ 1/2 can of milk
1 small package of mixed vegetables
1 package 2 cups of grated cheese
Mix the 1st four ingredients in a large bowl, grease a 13x9 pan, then top the casserole with cheese. I have sometimes added cheese in the casserole too, depending on my mood.
Enjoy one of my favorite childhood memories.

Birthday dinner for dd #2......
Our daughter has picked out for her birthday dinner:
Chicken alfredo, with broccoli and mushroom, garlic bread, salad. Her birthday cake will be german chocolate one of her favorites.
For breakfast she had blueberry bread with fresh fruit salad. We took a blueberry muffin mix and made it into a bread.
For lunch we will be making pizza poppers, and tator tots and salad.
You take a biscuit (the flaky layer style)
put pieces into a muffin pan (half of a biscuit)
add pizza sauce and your favorite toppings. Don't forget the cheese. :-)
This is something fun for kids and the whole family!

2 nights of dinner...............
Yesterday while I had to be at work I told my oldest daughter how to cook it, well was suppose to.
Took a package of frozen skinless and boneless chicken breast. 4 Potatoes, 1 Tbsp, garlic, I whole onion chopped, pinch of parsley. Now I asked her to cook it in chicken broth that I had in the refrigerator in stead she used a can of chicken and rice soup. oops! But it was good! We cooked it in the crock pot. Then had salad for dinner.
Tonight's dinner:
Stuffed acorn squash, green beans and baked apples
2 acorns cut in half and seeded
bake at 350 degrees in a glass dish for about 30 minutes till tender.
Cook 1 1/2 pounds of ground chuck or turkey breast or even sausage would be good and drain. Then add about 1/2 of a med. onion, 1 Tbsp. garlic, 1 tsp. Italian seasoning and sauteed. Once this is done shut the stove off. Cook about 1 cup of rice, then add Parmesan cheese to the mixture along with the rice.
Once the acorn has cooled off a bit to where you can handle it scoop out some of the middle but leave enough so it hold its form and add to the mixture. Then fill your squash with the mixture. Top with mozzarella cheese or some other type of grated cheese. Bake additional 20 minutes.
I have done this recipe somewhat similar to zucchini's making zucchini boats.
Our dinner however was good I will let you know that my stuffed acorn squash was a bit dry. So you may want to add something to make it more moist.
