Last nights dinner...

Spanish Rice

2 pounds ground turkey

3 cups brown rice

1 pint salsa (I used our own canned)

2 cups chicken broth  (I used my own that I made)

1 quart of tomatoes and onions  (I used my own canned)

1/2 large green pepper

1 small onion

3 T. garlic

basil, Italian seasoning, Ms. Dash table blend, cilantro, black pepper, season to your taste.

Prepare in a large skillet cook and drain ground turkey.  Add remaining ingredients and simmer.  Enjoy!

I have to watch every thing that goes into our food.  My husband is on a no iodine diet (salt).  He can have very little if any at all.  So I read all label and try to make sure their is hardly any in none at all.

Easy Tamale casserole.....

1 1/2 to 2 pounds of ground beef

1/2 to 3/4 cups of onion

small can of green chilies (save about a couple of tablespoons)

1 can of cream of tomato soup

1 cup of salsa  or their abouts

1 (16  ounces)can of corn drained..... I use on own from our garden

1 sm can of chopped black olives

1 Tblsp Worcestershire sauce

1 tsp. cumin

1 Tblsp minced garlic

shredded cheese

package of corn bread (prepare as directed)

sour cream (use for later)

Cook ground beef with onions and drain.  Grease a 13x9 dish Preheat oven to 350 degrees.  In the same skillet and mix ground beef and onions and remaining ingredients except cheese and corn bread.  Layer ground beef mixture on the bottom of the pan, then top with cheese and then crumble with the corn bread.  Bake for about 20 minutes or until the cheese is melted. 

Topping:

1 cup of sour cream

2 Tbls. chopped green chilies

2 tsp. lime juice  (squeeze 1/2 lime)

mix all together.

I found this recipe years ago in one of my cookbooks.  I've changed it some to our taste. 



Greek Inspired Crustless Quiche

This morning my youngest said to me mommy can we make a crustless quiche?  I thought to myself why not!  So we got down my deep dish pie pan and started to assemble it.  This is how we did it.

 

 

 Greek inspired Crustless Quiche

 

 Melt butter in the bottom of your pie dish about 3 T

Once melted add hash browns Southern Style

 or chop up your own potatoes.  The potatoes makes your curst.  Bake for about 20- 30 minutes till tender @ 350 degrees

Season with Italian seasoning, basil, and a little salt to taste.

 

 Top seasoned potatoes with frozen chopped spinach and onions and ham. 

 

 Then beat up 4 eggs, ¼ cup of milk, dash of tabasco sauce, 1 tsp. garlic.  Pour over vegetables and top with feta cheese.  Continue to bake for another 20 minutes or until eggs are set.  I added about 1 tsp olive oil to the eggs.

 

Could add shredded cedar cheese on top.

 

 I ate mine with green olives and Wow to my amazement was it ever delicious.  I would like to put them in the quiche next time and more cheese like the chedar but my husband and youngest daughter don’t like olives so I will have to eat them on the side.   Enjoy!

Apple and Pear butter re-run

Apple butter

The other day we made apple butter and this is how we did it.
 
First we wash and peel and core the apples about 5-6 pounds.  I cooked the apples in a sauce pan with a little water.  After the apples are soft then I used a potato masher and mashed the apples to apple sauce consistency.  If you just wanted apple sauce this is how it is done.  You would either add sugar and cinnamon at this point if wanting applesauce.  At this point do not add anything if wanting to make apple butter except the enough water to cover the bottom to cook the apples.
 
 
Next step for apple butter: Once your apple sauce is done add about 1 1/2 cups of apple cider (can use apple juice [unsweetened), 1 Tblsp. cinnamon,1 to 1 1/2 cups sugar, 1/2 cup brown sugar firmly packed, 1/2 tsp. ground cloves and 1/4 tsp. allspice. Allow to cook overnight on low in your crock pot. 10-15 hours or until mixture is a deep brown.
Spoon hot apple butter into hot sterilized jars and seal, then process half-pints, 10 minutes in a boiling water bath.

Pear butter can be done the same way except you would use orange juice instead  of apple cider and use about 1/2 tsp. nutmeg instead of other spices.  You can also use 1 tsp. grated orange peel for additional flavor.  I didn't have any oranges to zest so, I left that out.  Enjoy and Happy harvesting!
